The host of the café: Hello, everyone. I'm …. I'm the chief of the cookery club "Euphoria". We invite you to enjoy tasty dishes and are ready to share our secrets with our clients and teach you to prepare delicious fillings and salads for using in pita bread or lavash. Our place is unusual because our highly-qualified cooks both provide our visitors with the recipes and give them a fine opportunity to see how the dishes are cooked. You are expected to exchange recipes with us and the best dishes will be included into our menu and our guests will appreciate your favourite salad or soup. We hope you won't be disappointed with the service and the atmosphere of our café.
Teacher (in the role of a waiter): Today our meeting is devoted to flat mountain bread which is especially popular in our region because it's traditional bread cooked by lots of peoples living in the North Caucasus. English-speaking countries have appreciated its taste as an ideal alternative to pancakes and different pies made of dough, fancy or faky pastry. The bread is simple and quick to cook, contains a few calories and can be included into the list of healthy products. We recommend people being on a low fat diet to eat lavash with light fillings. Our regular visitor is going to tell us some words about pita breads.
Pupil 2 : Pita breads, mostly round, sometimes oval, both large and small, wholemeat or plain have been popular in Australia for many years .T hey may be toasted or crisped in the oven or warmed in the microwave oven and used in a myriad of ways. These flat breads are used as pockets for warm meat dishes like kebabs, satayas and a variety of salads. They are also used as a spring roll wrap to hold different fillings.
Slide 1: Lavash bread or mountain bread has become a completely traditional meal in Australia lately. These thing sheets are made from wholemeal and white flower. They are made with yeast but there is also a yeast-free variety. Lavash bread has a natural and sweet taste and is delicious straight from the package when it is soft and flexible. You may dry it in the oven until it's crisp and crackly. Lavash bread has many uses. Use it instead of pasta in lasagna. It can replace pastry in strudel or pancakes in enchiladas. It is especially great for adding to lunches and snacks as a wrap or roll for filling either warm or cold. A lavash roll may be heated in the oven or under the grill.
Pupil1 (the host of the café) : We know that some of you are real lavash fans and ready to recommend us the most popular fillings wrapped in lavash. They originated in the Middle East and widely used in Australia . We expect N (Pupil 3 ) to teach us how to cook the salad ideal for wrapping in pita breads.
Pupil 3: I'd like to offer you Eggplant salad which is extremely good for those who value healthy, tasty, substantial dish low in fat and in cholesterol. Slide2
To cook this salad you need: 500g eggplant
2 tablespoons oil
500g tomatoes, skinned and diced
½ cup mustard pickles
Slice the eggplants and cut into large dice. Place in a colander, sprinkle with salt fnd let stand for 1 hour. Rinse and pat dry. Heat the oil in a heavy saucepan, add the diced eggplants, toss in the oil and cook for about 5 minutes. Add the diced tomatoes, cover the saucepan and cook gently for 50 minutes. Cool the mass. Chop the pickles into small pieces and mix them with the cooled eggplant.
This salad is excellent in pita bread or for using with cold meat in sandwiches or served with hard-boiled eggs. You can put it in the centre of the mountain bread and roll up like a spring roll. The salad is easy to cook. I hope you'll enjoy the filling. Good appetite.

Chill Bean Salad.
To cook the salad you need: 2 cans red kidney beans, drained
1 onion (red salad one if available)
1 clove garlic, crushed
½ red chilli, chopped
2 stalks celery, finely sliced
1 tablespoon chopped parsley
2 tablespoons chopped fresh coriander
2 tablespoons lemon juice
2 tablespoons salad oil
Salt and pepper to taste
Place the drained beans in a salad bowl with the sliced onion, garlic, chilli, celery, par sley and coriander. Combine the lemon juice and oil, mix well, pour over the beans and season with salt and pepper. Use to fill the pockets of pita bread and garnish with shredded lettuce or chopped hard-boiled eggs.
Teacher (in the role of a waiter): Speaking about traditions of Caucasian cuisine we cannot help mentioning kebab , shashlyk. N (Pupil 5) is going to offer us pork satay which is tempting filling in mountain bread.
Pork Satay.
To cook this salad you need: 1 glove garlic, crushed
1 tablespoon peanut oil
2 tablespoons lemon juice
2 tablespoons soy sauce
500g tender lean pork
3 large rounds of pita bread
Shredded lettuce
1 salad onion, sliced
Combine garlic, peanut oil, lemon juice and soy sauce in a bowl. Cut the pork into 1.5 cm cubes and add them in the bowl, toss and allow standing for 2 hours, turning occasionally. Thread cubes on to skewers, allowing 6 cubes per skewer. Grill under a preheated grill, turning and brushing with marinade. Halve the pita bread and spoon in shredded lettuce, onion or bean sprouts, push pork cubes off skewers on to the salad vegetables. Heat the remaining marinade and spoon on top.
Pupil 2 : Can chicken, lamb or beef replace pork in the satay?
Pupil 5: Yes, you can. Vary the salad vegetables to use with what you have on hand, but row onion is a must.
Pupil 1 (the hostess of the café): Think of different kinds of marinade, sauce for making shashlyk. Be ready to share you cookery secrets with us. Your divine kebab will be number one dish on our menu. N (Pupil 6) would like to give us the filling used in pita bread at her home. The filling is very popular in our region.
Cheese filling.
To coo k this filling you need: 500g suluguni cheese
4 lavash sheets
1 bunch of dill
Grate suluguni cheese. Chop the dill and combine with the cheese mass. Divide each lavash sheet into 4 parts . Envelope the filling into each part. Spread with oil and crisp in the oven.Slide5
Teacher ( in the role of a waiter) : N ( Pupil 7) expect us to enjoy the original filling -Avocado and Chicken salad.
Pupil 7: This salad is good served in pita. Poached chicken breasts are so handy for snack meals, school sandwiches or salads.Slide6
Avocado and Chicken Salad.
To cook this salad you need: 1 avocado
1 teaspoon lemon juice
2 cooked chicken breasts, cooled
¼ cup natural l yogurt
¼ cup mayonnaise
Dash Tabasco sauce
Salt and pepper
3 pita rounds or flat mountain bread
Shredded lettuce.
Peel avocado and cut into fine strips, place in bowl an d sprinkle with lemon juice. Shred chicken and add to bowl. Combine yogurt, mayonnaise and Tabasco sauce, pour over avocado and chicken, toss lightly, season with salt and pepper. Halve the pita rounds, spoon in some shredded lettuce, top with Avocado and Chicken salad and serve immediately. Or use the flat mountain bread, put the salad in centre and roll up like a spring roll.
Pupil 1 (the hostess of the café) : Now you can look through the menu and choose the dishes from a great variety of salads. For dessert we offer a wide range of ice-cream.
Waiter: Are you ready to order?
Pupil 8: Yes, we are. We would like to order chicken and mushroom salad, suluguni cheese wrapped in lavash and banana ice-cream f or dessert.
Pupil 9: I'm in the mood for something special.
Waiter: How about treating our festive salad called " Tenderness"?
Pupil 9: Does it contain garlic or any other spices? Well, you see the main reason for not eating spicy food is that I'm on a strict diet.
Waiter: If I were you I'd order chicken salad. It's light, nutritious, and doesn't contain any spices.
Pupil 8: I can't live without dessert. I can't resist ordering ice-cream. Could you put banana and pineapple pieces on the top of the ice-cream?
Waiter: Unfortunately, pineapples are not available. What about grated chocolate?
Pupil 8: No, thanks. Just fruit top, please.
Waiter: OK.
Teacher: Look through the texts in the leaflet on your tables, exchange the information and share your opinion with the rest of the visitors.
Pupil 10: Have you ever heard of fish-flavoured ice-cream, cheese ice-cream, beef ice-cream or even garlic ice-cream?
Pupil 11: You must be joking.
Pupil 10: No, in Japan, sour-tasting ice-cream is very popular. But sweet ice-cream is also bought and vanilla and chocolate ice-cream is two top-selling flower.
Pupil 12: Do you know what is the most popular sandwich filling in Britain?
Pupil 13: Cheese or ham.
Pupil 12: Wrong. Chicken filling is number one sandwich lunchtime snack. 2 billion are sold in Britain every year.
Pupil 13: Do you happen to know that Bacon sandwich contains more salt than 10 bags of crisps and cheese sandwich has more fat than a hamburger?
Pupil 14: Who'd have thought it?
Pupil 15: Have you heard of baby watermelons that only two and a half centimeters in size?
Pupil 12: How interesting!
Pupil 10: I've heard about it.
Pupil 9: I do know about it.
4. Interviewer: Hello, Everybody. I'm a reporter for the "City news". I'd like you to answer my questions for our newspaper.
Interviewer: Are you enjoining the atmosphere here?
Pupil 10: Yes, I'm. I really like the opportunity to learn recipes of national dishes.
Interviewer: What is your opinion about today's menu?
Pupil 3: It's fantastic! The fillings are really tempting.
Interviewer: Would you recommend trying the dishes to your friends?
Pupil 10: Yes, I would. I'll advise everybody to visit the club. I like the idea to combine delicious and healthy dishes on today's menu. I'm sure my friends will become great lavash eaters.
Interviewer: Is it the first time you have tried original fillings for lavash?
Pupil 12: Yes, it is. I can't resist tasting the entire dishes on the menu.
Interviewer: What do you like most of all?
Pupil 8: Cheese wrapped in lavash. It's perfect for breakfast.
Interviewer: How do you find the Australian fillings?
Pupil 4: They are light, tasty and easy to cook.
Interviewer: Would you cook anything from on today's menu?
Pupil 5: Yes, I'd love to. I've learnt a lot about lavash and original salads which can be served in pockets, wrapped or rolled up in mountain bread.
Interviewer: Are you planning to teach your visitors to acquire cookery skills? What is your next meeting

6. Teacher: I would like you to taste a festive salad which can be wrapped in lavash or pockets. It has a unique taste because it contains surprising combinations of different ingredients. I hope you'll discover an unusual taste and guess what products it consists of.

T: No. It's not advisable to put garlic or onion in it.
P7: Do you add greenery into it?
T: No, I don't.
P8: Can I put canned peas instead of canned corn?
T: I don't recommend you to substitute peas for corn? You won't spoil the taste if you put sour cream instead of mayonnaise.
P9: How much time does it take you to cook the salad?
T: About 40 minutes.
Crab tenderness.
To cook the salad you need: crab stick - 250g
ham - 300g
marinated champignons - 1 can
frozen bean pods - 500g
sweet corn - 1 can
oil - 2 tablespoons
Heat the oil and stew bean pods until they are tender. Add salt to taste while stewing. Dice ham and crab sticks and put them in a bowl. Add shredded marinated mushrooms and sweet corn. Mix stewed pods with the ingredients. Enrich the salad with mayonnaise.
